Zucchini and Greens Burgers

1 lb. ground meat

1 egg

1 C grated zucchini

4 smaller green leaves from mustard, kale, chard, or spinach; stems removed

1/2 t paprika

1 clove garlic, minced

1 green onion, thinly sliced

salt and pepper to taste

 

Cut green leaves with a chiffonade cut. Mix all ingredients together until well blended. Make 4 burger patties and cook however you like – grill, broil, stovetop. Serve on rolls with your favorite burger toppings.
