Tomato Pie

Crust

2 C Bisquick + ½ C milk

5-6 tomatoes, thinly sliced

1 onion, thinly sliced in rings

2 C grated cheddar cheese

1 ½ C mayonnaise

2 T fresh chives, scallions, or onion, minced 

1 T fresh basil, chopped (optional)

salt and pepper to taste

a few drops of Tabasco Sauce (optional)

 

Placed sliced tomatoes on paper towels, sprinkle with salt, and let sit for 1 hour.

Meanwhile, preheat oven to 400F, then mix Bisquick and milk in a bowl. Roll out and punch into a greased pie pan.

In pie crust, alternate layers of tomato and onion slices (@ 3 layers of each).

Mix cheese, mayo, and Tabasco (if using). Coat top of pie with cheese mix, sprinkle with herbs and seasonings.

Bake for 30 minutes, careful not to burn during those last few minutes. Let pie sit for 20 minutes before serving.
