Stir-Fried Chicken and Bok Choy

¼ C soy sauce

1 T rice vinegar

2 t light-brown sugar

2 boneless, skinless chicken breasts

4 t cornstarch

2 T vegetable oil

2 cloves garlic, thinly sliced

2 t fresh ginger, peeled and minced

4 C Bok Choy, chopped

1 small jalapeno, seeded and sliced 

Cooked rice, for serving

In a small bowl, combine soy sauce, vinegar, brown sugar, and 3 tablespoons water. Slice chicken into thin strips. In a medium bowl, toss chicken with cornstarch until coated. In a large wok or skillet, heat oil, garlic, and ginger over medium-heat until fragrant, about 1 minute. Add chicken and cook until lightly browned and cooked through, 6-8 minutes. Add Bok Choy and jalapeno; cook, stirring, until Bok Choy slightly wilts, about 2-3 minute. Add soy sauce mixture and cook until sauce thickens slightly, 2 minutes. Serve over rice.

NOTE: Can easily add carrots or garlic scape to this recipe.
