Smoky Stove-Top Beans

8 strips bacon, chopped

1/2 bell pepper, diced

1/2 onion, diced

1 large can baked beans

4 C green beans, cut up into 1-inch pieces

1 can white or black bean, rinsed

1/2 C chopped tomato

1/2 C barbecue sauce  

 

In a small pot, boil green beans in water over medium heat for about 30 minutes or until tender.

In a large pot, cook bacon over medium heat, stirring occasionally until crisp.  Remove bacon from saucepan leaving no more than 2T of grease in the pan. Cook peppers and onion in bacon grease, stirring occasionally until tender.

Reduce heat to medium low. Stir in all beans, tomato, barbecue sauce, and bacon. Simmer until thoroughly heated about 20-30 minutes. Serve warm.

NOTE: For a richer smoke flavor, add 1/2 t Smoked Paprika to BBQ sauce.
