Piquant Potatoes

1 bunch of turnips, stems removed and quartered

1 bunch of radishes, stems removed and quartered

2-3 C of chopped potatoes, cut into 1-inch pieces (or quartered if small rounds)

1/2 onion, sliced

1-2 cloves garlic, minced

1 T butter

1 T olive oil

salt and pepper to taste

2 t thyme (or rosemary)

 

Bring to boil, a large pot of water and 1 t kosher salt.  Add turnips, radishes, potatoes to pot and cook for 15 minutes; low boil. Drain.  

In a large skillet, heat butter and oil. Add cooked vegetables, onions, and garlic. Saute until crispy and browned. Season with salt, pepper, and thyme to your desired liking.
