Lemon Dill Roasted Potatoes

1 lb. potatoes, cut into 1-inch pieces

1/2 medium onion, thinly sliced

1/2 pepper (red or green), thinly sliced

2 T olive oil (or canola, avocado, grapeseed)

1/2 t salt

1/2 t black pepper

1/2 t dill, plus more for serving

zest of 1 lemon 

1 T lemon juice, plus more for serving

2 garlic cloves, minced

parsley for garnish (optional)

 

Preheat oven to 425F. 

In a large bowl, mix all ingredients together with a spatula to be sure all vegetables are coated well. Spread evenly on a baking sheet. Bake for 25-35 minutes; stir halfway through. Season with more dill and lemon juice, and sprinkle with parsley, if desired.
