Kale Chips

4 C kale leaves, washed and patted dry

2-3 tsp. olive oil (or avocado oil)

1 tsp. kosher salt

1 tsp. ground pepper

1 tsp. garlic powder (optional)

 

Preheat oven to 300F. Remove stems from each kale leaf. Tear each leaf into pieces just larger than potato chips as they'll shrink when baking. Place torn pieces in a large bowl and drizzle with oil.  Rub oil into each leaf making sure to cover with a thin coat of oil.  Place kale pieces on baking sheet spreading them apart so as not to overlap. Season sparingly with salt, pepper, and garlic (if using) as you can always add more after baking. 

Bake 10 minutes, then rotate tray and bake another 5 minutes or until kale has reached a good crispiness.  Remove and let sit a few minutes to cool.
