Kale & Carmelized Onion Grilled Cheese

6 - 8 kale leaves, stems removed

2 t canola oil

2 medium onions, cut into 1/2-inch slices

1/4 t pepper

1/4 t salt

1 t red wine vinegar

8 slices of multi-grain bread

1/4 C Parmesan cheese, freshly grated

1 C Raclette cheese, grated (Swiss or Gruyere are also good)

Preheat oven to 300F.  Bring a small pot of water to boil.  Add kale, then remove from heat and let sit for 4 minutes until kale is bright green. Drain and rinse in cold water, then pat dry. 

Heat skillet over medium heat. Coat with oil. Add onions, pepper and salt. Cook 10 minutes until onions are tender and browned; stir frequently. Remove from heat, stir in vinegar and toss to coat. Coarsely chop onions; set aside. 

Butter one side of each bread slice. Arrange 4 slices on baking sheet with butter-side down. Top these 4 slices with 1 T Parmesan cheese, 2 kale leaves, 1/4 of onions, and 1/4 of Raclette cheese. Top with remaining slices of bread with butter-side up.  Bake sandwiches for 8-10 minutes, flipping halfway through.  Sandwiches should be toasted and cheese melted.
