Grilled Bok Choy with Ginger and Garlic

2 T olive oil

1 medium bok choy, sliced in half

1 t fresh minced ginger (or 1/2 t powdered ginger)

2 cloves garlic, minced (1 garlic scape)

salt and pepper to taste

pinch crushed red pepper flakes, optional

Drizzle oil over each half.  Sprinkle over each with ginger, garlic, salt and pepper, and pepper flakes, if using.  Wrap in foil and grill off direct flame for 30 minutes.

NOTE: Original recipe called for stir-frying in a wok or skillet over stove. So either method produces nice results.
