Garlicky Greens

3 T butter or oil

1-2 garlic scape, finely minced

2 lbs. greens (mix Swiss chard and lettuce)

2-3 green onions (scallions)

3 T low-sodium soy sauce

Water as needed

Salt & pepper to taste  

Heat butter or oil in large skillet over medium heat. Add scape and cook for 2 minutes. Add as many greens as will fit in skillet. Turn with tongs to coat with oil and scape, adding remaining greens as they fit. Add green onions and soy sauce, and a bit of water to keep greens steaming to wilt (not much is needed). Season with salt and pepper. Cook for 2-3 more minutes; drain excess liquid. Serve warm.

NOTE 1: 2 lbs. of green will take the ¾ lbs. of chard and one head of lettuce.

NOTE 2: Prepare chard by removing leaves from stalks. Treat leaves like spinach and stalks like celery. Use all of it in this dish – adds nice texture! Any greens may be used in this dish – spinach, kale, mustard, etc.

NOTE 3: Serve as a side dish. Serve over cooked pasta and garnish with a squeeze of lemon juice and freshly grated Parmesan cheese. Or for an added burst of flavor use a 1-inch piece of fresh ginger root, peeled and minced; add and cook with scape.
