Crockpot Beef & Acorn Stew

2-3 lbs. beef chuck roast, cut into 1-inch pieces

1 t oil

Salt and pepper

1 acorn squash, peeled, seeded, cut into 1-inch pieces*

2-3 large potatoes, cut into 1-inch pieces

2-3 carrots, peeled and cut into ½-inch slices

1 onion, sliced

1 envelope beef gravy mix

2 tomatoes, chopped 

2 cloves garlic

1/2 t allspice

2 large bay leaves

Generously sprinkle beef cubes with salt and pepper. Heat oil in a large skillet over medium-high heat, then brown the meat in batches, taking care not to crowd the pan. Place browned meat in crockpot along with pan juices.  To the crockpot, add remaining ingredients and top with bay leaves. Cover and cook on Low for 6-8 hours or on High for 4-6 hours. Discard bay leaves before serving.  

NOTE: *Butternut squash may be substituted.
