Creamy Cucumber Salad

2-3 cucumbers, peeled and thinly sliced

1 onion (red or white), halved then thinly sliced

1 packet Hidden Valley Ranch dry dressing mix

1 C milk

1 C mayonnaise

 

In a bowl, mix dressing - combine dry mix, milk, and mayonnaise; stir well.  Add sliced cucumbers and onions.  Stir and chill for no less than an hour before serving. 

 

NOTES:  Substitute buttermilk for milk.  Try half mayo, half sour cream.

Also, the dressing alone with stay fresh in the refrigerator for 3-4 weeks.  So use only enough dressing on the amount of salad you will eat at a meal. Leftovers of this salad are not ideal - it becomes wilted and watery.
