Cabbage Tossed Salad

Salad:

4 C chopped cabbage

4 C chopped lettuce

2 celery ribs, chopped

3 green onions, sliced (or 1/2 C onion, minced)

Dressing:

½ C cider vinegar

¼ C canola oil

4 t sugar

1 t salt

1/2 t garlic powder

1/2 t black pepper

Combine all vegetables in a large bowl. In a small bowl, whisk together dressing ingredients. Pour over salad and toss. Chill for 30 minutes before serving.

NOTES: Add some thinly sliced radishes and/or blanched crisp-tender and cut green beans for another crisp texture and bite. If you have both, try a mix of green and red cabbage for a nice visual display.
