Buttery Bok Choy Gratin

5 T butter

4-5 C bok choy, chopped leaves and stalks

1 C green onions, green and white parts

1-2 cloves garlic, minced (or 1 garlic scape, minced)

1/3 C flour

2 C milk

1 ½ C white sharp cheddar cheese (or Gruyere)

salt and pepper to taste

1 C panko crumbs

½ C cooked bacon, chopped (optional)  

Preheat oven to 400F. In a large skillet, melt butter. Remove 2 T to a small bowl, stir in the panko crumbs; set aside. To the hot skillet, add bok choy, onions, and garlic; cook until softened, about 10 minutes. Stir in flour, milk, and cheese; simmer another 3-5 minutes. Pour into a greased 8 x 8-inch baking pan and bake for 35 minutes. YUM!
