Braised Red Cabbage

4 slices bacon, cut into 1/2-inch pieces

1 medium onion, thinly sliced

1 head red cabbage (@ 2 lb.), quartered, cored, thinly sliced crosswise

1/2 C cider vinegar

1/2 C dry red wine

3/4 C water

2 T dark brown sugar

coarse salt and ground pepper

1 Golden Delicious apple, peeled, cored, cut into 1/2-inch pieces

 

In a large pot on medium heat, cook bacon until crisp and fat renders, about 8 minutes. Add onion, stir, and cook 3 minutes. Add cabbage, vinegar, wine, sugar, and 1 1/2 t salt; stir to combine.  Raise heat to medium-high heat, cover, and cook 5 minutes. 

Reduce heat to medium-low, and continue to cook, covered, stirring occasionally, 30 minutes. Stir apple into cabbage, and cook, covered, until apples and cabbage are tender, 25 - 30 minutes. Season with pepper.

NOTE: Any crisp, sweet apple (even a tart green) will work in this recipe.
